Pumpkin Spice Oat Baked Apples

'Tis the season for all things PUMPKIN SPICE! YAY! We made it. Yes, I'm a sucker for pumpkin pie spice in just about everything.. especially my oats. Thick, creamy oats with chunks of apple AND pumpkin pie spice. What a dream.

So, looking for a perfect prep-the-night-before-breakfast?? Top with yogurt or whipped cream. OR.. top it with some no churn ice cream and a drizzle of caramel (our favorite caramel, linked here) and make it for a super delicious dessert. YUP. I went there. 

All you do here is scoop out the middle of a few apples. Next, make oatmeal, add heavy cream, apple chunks, maple syrup, brown sugar, pumpkin pie spice and a pinch of salt. Finally, you stuff the mixture into the apples. Stick them in the fridge for a quick bake in the morning for breakfast or bake off immediately. Either way, DELISH. Kids love them. Adults love them. It's fall baby, let's get into it! PUMPKIN SEASON IS HERE!

Alright, enough pumpkin talk.. go bake some apples!

Pumpkin Spice Oat Baked Apples

4 Honeycrisp Apples, or any apple you like :)

2 cups water

3/4 cup old fashioned oats

pinch of salt 

1/4 cup heavy cream

     *for dairy free, use coconut cream or dairy free milk of choice 

2 tablespoons maple syrup

2 tablespoons brown sugar

1 teaspoon pumpkin pie spice

optional: 1/4 cup chopped pecans or walnuts 

optional: 1/4 cup raisins

1. Preheat the oven to 400F degrees. Cut the top off and core the apples. Carefully scoop out some of the inside using a melon baller or a spoon making a hole in the center, chop the apple insides into small cubes and set aside. Put the cored apples into a baking dish. (Reference picture above)

2. To make the oatmeal, bring water to a boil. Add in the oats and apple pieces. Cook for about 7-10 minutes, or until thick and creamy. Stir often. Once thickened, turn off heat and add in a pinch of salt, heavy cream, maple syrup, brown sugar and pumpkin pie spice. If using, fold in nuts and raisins. 

3. Fill each apple with oatmeal mixture. Top with a little sprinkle of some more brown sugar. Bake for 30-45 minutes. Top with yogurt, whipped cream or ice cream.. or enjoy as is! 

Ting's Tip: If you want to make this the night before, follow the recipe as is: Core the apples, make the oatmeal, stuff the apples, but do not bake until the morning. Instead, cover and place in the refrigerator until ready to bake in the morning.
